  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a saucepan, cook quinoa according to package instructions.
  4. In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  5. Add tomatoes, spinach, cooked quinoa, feta cheese, salt, black pepper, paprika, and fresh parsley to the skillet. Cook for 5 minutes.
  6. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  7. Bake for 30-35 minutes until the peppers are tender.
  8. Let the stuffed peppers rest for 10 minutes before serving.
