  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mash the bananas until smooth. Add the Greek yogurt, honey, egg, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the banana bread cool in the pan for 15 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
