  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  2. In a large mixing bowl, beat cream cheese and sugar until smooth. Add cocoa powder, instant coffee powder, and hot water. Mix well.
  3. In a separate bowl, whip the whipping cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  6. Remove from the oven and let it cool completely. Chill in the refrigerator for at least 2 hours or overnight.
  7. Before serving, garnish with whipped cream and chocolate shavings. Enjoy!
