Instructions

  1. In a large bowl, mix together the all-purpose flour, powdered sugar, and almond flour.
  2. Cut the unsalted butter into small pieces and add it to the flour mixture. Use your fingers to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together the egg yolks, vanilla extract, and milk. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Divide the dough into two equal portions. Roll out each portion on a lightly floured surface into a 1/4-inch thick rectangle.
  5. Spread raspberry jam evenly over one of the rectangles. Place the other rectangle on top and press lightly to seal.
  6. Using a star-shaped cookie cutter, cut out star shapes from the dough. Place the stars on a baking sheet lined with parchment paper.
  7. Sprinkle sliced almonds on top of each star.
  8. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the Finnish Christmas stars to cool before serving.
