  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and green bell pepper. Cook until softened.
  2. Add sofrito and sazon seasoning. Stir well.
  3. Add rice and stir to coat with the sofrito mixture.
  4. Drain and rinse pigeon peas. Add them to the pot along with water and salt.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  6. Remove from heat and let rest for 5 minutes. Fluff with a fork before serving.
  7. Garnish with cilantro, if desired.
  8. Serve hot and enjoy!
