Farmer’s Pie (Vegetarian Shepherd’s Pie)

Preheat the oven to 400°F (200°C).

Peel and chop the potatoes. Boil them in salted water until tender. Drain and mash with a potato masher or fork. Set aside.

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add diced carrots, peas, vegetable stock, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Stir well and cook for 5 minutes.

Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top.

Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown.

Let it rest for 10 minutes before serving.
