Fabulous Stuffed Mushrooms
Stuffed mushrooms have been enjoyed as a popular appetizer since the early 20th century, with various fillings and flavors.
This is vegetarian, gluten free and low carb recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 375°F (190°C).

Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet.

In a skillet, heat olive oil over medium heat. Add the chopped mushroom stems, onion, and garlic. Cook until softened, about 5 minutes.

Add the spinach to the skillet and cook until wilted, about 2 minutes.

Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, salt, black pepper, and fresh parsley.

Spoon the filling into the mushroom caps, pressing down gently.

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.

Remove from the oven and let rest for 5 minutes before serving.
