Eggnog Tapioca
Eggnog Tapioca is a festive twist on traditional tapioca pudding, combining the flavors of eggnog with the creamy texture of tapioca pearls.

In a saucepan, bring 3 cups of water to a boil. Add tapioca pearls and cook for 15 minutes, stirring occasionally. Drain and set aside.

In a separate saucepan, heat milk over medium heat until it begins to steam. In a bowl, whisk together egg yolks and sugar until light and fluffy.

Slowly pour the hot milk into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens.

Remove from heat and stir in vanilla extract and ground nutmeg. Let the mixture cool for 10 minutes.

Divide the cooked tapioca pearls among serving glasses. Pour the eggnog mixture over the pearls.

Refrigerate for at least 30 minutes to allow the flavors to meld.

Before serving, top each glass with whipped cream and a sprinkle of cinnamon.
