In a large skillet, cook the ground pork until browned. Add shredded cabbage, carrots, soy sauce, sesame oil, and minced garlic. Cook until vegetables are softened.

In a small bowl, mix cornstarch and water to make a slurry. Add the slurry to the skillet and cook until thickened. Remove from heat and let cool.

Place an egg roll wrapper on a clean surface. Spoon 2 tablespoons of the pork and vegetable mixture onto the center of the wrapper. Fold the bottom edge of the wrapper over the filling, then fold the sides in towards the center. Roll up tightly. Repeat with remaining wrappers and filling.

Heat vegetable oil in a deep skillet or pot. Fry the egg rolls until golden brown and crispy. Drain on paper towels.

Serve hot with your favorite dipping sauce.
