Preheat the oven to 350°F (175°C).

In a mixing bowl, whisk the eggs.

Chop the bell peppers, spinach, and cherry tomatoes into small pieces.

Add the chopped vegetables, shredded cheese, salt, and black pepper to the eggs. Mix well.

Grease a muffin tin with cooking spray.

Pour the egg mixture into the muffin cups, filling each about 3/4 full.

Bake in the preheated oven for 20 minutes, or until the egg muffins are set and golden on top.

Remove from the oven and let them rest for 5 minutes.

Use a knife to loosen the edges of the muffins, then remove them from the tin.
