Egg Fried Rice
Egg fried rice is a staple dish in Chinese cuisine and is believed to have originated in the city of Yangzhou during the Ming Dynasty.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.

Add the diced onion and cook until softened, about 2-3 minutes.

Push the onions to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through, then mix them with the onions.

Add the frozen peas and carrots to the skillet and cook for another 2-3 minutes, or until heated through.

Add the cooked rice to the skillet and stir-fry everything together for about 5 minutes, breaking up any clumps of rice with a spatula.

Drizzle the soy sauce over the rice and stir to combine. Season with salt and black pepper to taste.

Remove from heat and garnish with sliced green onions.
