  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the canned diced tomatoes, tomato sauce, chili powder, ground cumin, and salt. Stir well and let it simmer for 10 minutes.
  4. In a separate skillet, heat the remaining 1 tablespoon of vegetable oil. Dip each corn tortilla in the hot oil for a few seconds to soften.
  5. Spoon some of the tomato sauce mixture onto each softened tortilla, and sprinkle with shredded cheddar cheese. Roll up the tortillas and place them seam-side down in a baking dish.
  6. Pour the remaining tomato sauce mixture over the enchiladas, and sprinkle with the remaining shredded cheddar cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Let the enchiladas rest for 5 minutes before serving.
