  2. In a small bowl, mix together the granulated sugar and cinnamon.
  3. Separate the biscuit dough into individual biscuits. Cut each biscuit into quarters.
  4. Roll each biscuit quarter in the cinnamon sugar mixture until coated.
  5. Place the coated biscuit quarters into the greased muffin tin.
  6. In a small saucepan, melt the butter, brown sugar, and vanilla extract over medium heat, stirring until smooth.
  7. Pour the butter mixture evenly over the biscuit quarters in the muffin tin.
  8. Bake for 18-20 minutes or until golden brown.
  9. Remove from the oven and let cool in the muffin tin for 10 minutes.
  10. Carefully remove the monkey bread muffins from the tin and serve warm.
