  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, cocoa powder, instant coffee, and hot water until smooth.
  4. Add the melted chocolate, whipping cream, and vanilla extract. Beat until well combined.
  5. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 40 minutes or until the center is set.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake.
  9. Remove the sides of the springform pan and let the cheesecake cool completely.
  10. Refrigerate for at least 3 hours or overnight.
  11. Garnish with chocolate-covered coffee beans, if desired.
  12. Serve and enjoy!
