Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and cook until fragrant.

Add diced carrots and cook until slightly softened.

Push the carrots to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.

Add frozen peas and cooked rice to the skillet. Stir-fry everything together.

Pour soy sauce over the rice mixture and stir to combine.

Season with salt and pepper to taste.

Garnish with chopped green onions.
