Preheat the oven to 400°F (200°C).

Slice the potatoes into thin slices, leaving the bottom intact.

Place the potatoes in a baking dish.

In a small bowl, mix together the melted butter, garlic powder, paprika, salt, and black pepper.

Brush the butter mixture over the potatoes, making sure to get in between the slices.

Bake the potatoes for 40-45 minutes, or until they are golden brown and crispy.

Remove from the oven and sprinkle with cheddar cheese.

Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Garnish with chopped chives.
