Dried Tomato and Fennel Stuffing

Preheat the oven to 350°F (175°C).

In a large skillet, heat the olive oil over medium heat. Add the fennel, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the dried tomatoes, vegetable broth, dried thyme, salt, and black pepper to the skillet. Stir well.

In a large bowl, combine the bread cubes, parsley, and the vegetable mixture from the skillet. Mix until well combined.

Transfer the mixture to a greased baking dish. Cover with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown.

Let the stuffing rest for 10 minutes before serving.
