  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the dried apples, granulated sugar, ground cinnamon, salt, and lemon juice. Mix well and set aside for 15 minutes to allow the apples to rehydrate slightly.
  3. In a separate bowl, combine the all-purpose flour and unsalted butter. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add the ice water to the flour mixture and mix until the dough comes together.
  5. Divide the dough in half and roll out one half on a lightly floured surface to fit a 9-inch pie dish.
  6. Transfer the rolled-out dough to the pie dish and trim any excess.
  7. Pour the dried apple mixture into the pie dish.
  8. Roll out the remaining dough and use it to cover the pie.
  9. Crimp the edges of the pie crust to seal.
  10. Beat the egg in a small bowl and brush it over the top of the pie crust.
  11. Cut a few slits in the top crust to allow steam to escape.
  12. Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Remove the pie from the oven and let it cool for at least 1 hour before serving.
