  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves on a baking sheet, cut side down, and bake for 30-40 minutes or until the flesh is tender. Let cool for a few minutes.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly browned. Gradually whisk in the milk and cook until the mixture thickens, about 5 minutes. Remove from heat and stir in the cheddar cheese, parmesan cheese, salt, black pepper, and garlic powder until melted and smooth.
  3. Use a fork to scrape the spaghetti squash flesh into a large bowl. Add the cheese sauce to the bowl and mix well.
  4. Transfer the mixture back into the spaghetti squash shells. Sprinkle with panko breadcrumbs.
