In a large bowl, cream together the peanut butter, softened butter, powdered sugar, and vanilla extract until smooth.

In a separate bowl, whisk together the all-purpose flour and salt.

Gradually add the flour mixture to the peanut butter mixture, stirring until well combined.

Stir in the mini chocolate chips and chopped peanuts.

Roll the dough into 1-inch balls and place on a baking sheet lined with parchment paper.

Refrigerate the cookie balls for at least 30 minutes to firm up.

Preheat the oven to 350°F (175°C).

Bake the cookie balls for 10-12 minutes, or until lightly golden.

Allow the cookie balls to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
