Double Chocolate Mousse Pastries
Did you know that chocolate mousse was originally made with whipped raw eggs and chocolate? It wasn’t until later that whipped cream was added to create the light and airy texture we know today.
This is vegetarian recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Preheat the oven to 180°C.

Melt the dark chocolate and unsalted butter together in a heatproof bowl.

In a separate bowl, whisk the eggs and granulated sugar until thick and pale.

Fold the melted chocolate mixture into the egg mixture.

Sift in the all-purpose flour and cocoa powder, then fold until combined.

Divide the batter into 6 greased and floured individual pastry molds.

Bake for 10 minutes or until a toothpick comes out clean.

Remove from the oven and let the pastries cool in the molds.

In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.

In a microwave-safe bowl, melt the white chocolate and milk chocolate separately.

Remove the cooled pastries from the molds and slice them in half horizontally.

Spread a layer of whipped cream on the bottom half of each pastry.

Top with fresh raspberries.

Place the top half of the pastries on the whipped cream and raspberries.

Drizzle melted white chocolate and milk chocolate over the pastries.
