  1. Preheat the oven to 325°F (160°C). Crush the chocolate cookies and combine with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add cocoa powder and mix well. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla extract.
  3. Pour the cream cheese mixture over the crust in the springform pan. Bake for 60 minutes or until the center is set.
  4. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely.
  5. In a small saucepan, heat heavy cream until it begins to steam. Remove from heat and add chopped semi-sweet chocolate. Stir until smooth and pour over the cooled cheesecake.
  6. Refrigerate the cheesecake for at least 2 hours or until the chocolate ganache is set.
  7. Serve chilled and enjoy!
