Double-Baked Roquefort Potatoes
Roquefort cheese is made from sheep’s milk and is aged in natural caves in the Roquefort-sur-Soulzon region of France.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

Preheat the oven to 180°C (350°F).

Wash and peel the potatoes. Cut them into small cubes.

Place the potatoes in a pot of boiling water and cook for 10 minutes, or until they are tender.

Drain the potatoes and transfer them to a large mixing bowl.

Mash the potatoes with a potato masher or fork until smooth.

Add the Roquefort cheese, butter, milk, salt, and black pepper to the mashed potatoes. Mix well to combine.

Transfer the mixture to a greased baking dish.

Bake in the preheated oven for 30 minutes, or until the top is golden and crispy.

Remove from the oven and let it rest for 10 minutes.

Garnish with chopped chives before serving.
