Preheat the oven to 375°F (190°C).

Peel and slice the potatoes into thin rounds.

In a bowl, mix together the Dijon mustard, heavy cream, grated Gruyere cheese, grated Parmesan cheese, minced garlic, salt, black pepper, and fresh thyme.

Grease a baking dish and layer the sliced potatoes in the dish. Pour the cream mixture over the potatoes, making sure to coat them evenly.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15 minutes, or until the potatoes are golden and bubbling.
