  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the grated carrots, flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined. Stir in the chopped pecans.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
