  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies into fine crumbs and mix with melted unsalted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  2. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla extract, and continue beating until well combined.
  3. Melt the dark chocolate and fold it into the cream cheese mixture. Pour the mixture over the crust in the springform pan.
  4. Bake in the preheated oven for 60 minutes, or until the center is set. Remove from the oven and let it cool for 10 minutes, then run a knife around the edge of the pan to loosen the cheesecake.
  5. Refrigerate the cheesecake for at least 3 hours, or overnight, to allow it to set.
  6. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled cheesecake.
  7. Serve chilled and enjoy!
