  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the couscous, almond flour, coconut oil, maple syrup, vanilla extract, and a pinch of salt. Mix well.
  3. Press the mixture into the bottom of a tart pan to form the crust.
  4. Bake the crust in the preheated oven for 15 minutes.
  5. Meanwhile, pit and chop the medjool dates.
  6. In another bowl, mix the chopped dates and frozen mixed berries.
  7. Remove the crust from the oven and let it cool for 10 minutes.
  8. Spread the date and berry mixture evenly over the crust.
  9. Return the tart to the oven and bake for an additional 25 minutes.
  10. Remove from the oven and let it rest for 30 minutes.
  11. Serve the date-berry sweet couscous tart and enjoy!
