Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a microwave-safe bowl, melt the dark chocolate chips and butter together, stirring until smooth.

In a separate bowl, whisk together the flour, baking soda, and salt.

In a large mixing bowl, beat together the granulated sugar, brown sugar, and peanut butter until creamy. Add the egg and vanilla extract, and mix well.

Gradually add the melted chocolate mixture to the peanut butter mixture, stirring until well combined.

Gradually add the flour mixture to the wet ingredients, mixing until just combined.

Scoop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Press a mini peanut butter cup into the center of each cookie dough ball.

Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
