  1. Wash and soak urad dal and moong dal separately for 4 hours.
  2. Drain the water and grind the dals into a smooth batter.
  3. Add ginger, green chilli, salt, and baking soda to the batter.
  4. Heat oil in a deep frying pan.
  5. Drop small portions of the batter into the hot oil and fry until golden brown.
  6. Remove from oil and transfer to a bowl of water.
  7. Let them soak in water for 10 minutes.
  8. Squeeze out excess water from the soaked vadas.
  9. Arrange the vadas on a serving plate.
  10. Pour whisked curd over the vadas.
  11. Drizzle tamarind and mint chutney on top.
  12. Sprinkle cumin powder, salt, and chopped coriander leaves.
  13. Garnish with sev.
  14. Serve chilled.
