Wash and soak urad dal and moong dal separately for 4 hours.

Drain the water and grind the dals into a smooth batter.

Add ginger, green chilli, salt, and baking soda to the batter.

Heat oil in a deep frying pan.

Drop small portions of the batter into the hot oil and fry until golden brown.

Remove from oil and transfer to a bowl of water.

Let them soak in water for 10 minutes.

Squeeze out excess water from the soaked vadas.

Arrange the vadas on a serving plate.

Pour whisked curd over the vadas.

Drizzle tamarind and mint chutney on top.

Sprinkle cumin powder, salt, and chopped coriander leaves.

Garnish with sev.
