Heat vegetable oil in a large pan or wok over medium heat.

Add chopped onion, minced garlic, and grated ginger. Cook until onions are translucent.

Add mixed vegetables and cook until they are tender.

Sprinkle curry powder, salt, and black pepper over the vegetables. Stir well.

Add cooked rice to the pan and mix everything together.

Drizzle soy sauce over the rice and stir to coat evenly.

Cook for a few more minutes until the rice is heated through.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped spring onions (scallions) and serve hot.
