Chop the butternut squash, carrots, celery, onion, garlic, apple, and kale.

In a crock pot, combine the chopped vegetables, white beans, vegetable stock, thyme, rosemary, salt, black pepper, and bay leaf.

Cook on low heat for 4 hours.

After 4 hours, stir in the kale and parsley.

Cook for an additional 10 minutes.

Remove the bay leaf and stir in the lemon juice.
