  2. In a mixing bowl, whisk together the egg yolks and sugar until well combined.
  3. In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.
  4. Slowly pour the hot cream into the egg mixture while whisking continuously.
  5. Stir in the vanilla extract.
  6. Strain the mixture through a fine-mesh sieve to remove any lumps.
  7. Divide the mixture evenly among 4 ramekins.
  8. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  9. Bake for 30-40 minutes, or until the custard is set but still slightly jiggly in the center.
  10. Remove the ramekins from the water bath and let them cool to room temperature.
  11. Refrigerate the custards for at least 2 hours, or until chilled.
  12. Just before serving, sprinkle a thin layer of granulated sugar over the top of each custard.
  13. Use a kitchen torch to caramelize the sugar until it forms a crispy crust.
  14. Allow the sugar to harden for a few minutes before serving.
