In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Add egg yolks and pulse until dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat oven to 375°F (190°C). On a lightly floured surface, roll out dough to fit a 9-inch tart pan. Press dough into pan and trim any excess.

In a medium bowl, mix almond flour and 2 tablespoons of granulated sugar. Sprinkle mixture evenly over the tart crust.

Peel, core, and slice pears. Toss with lemon juice. Arrange pear slices in a circular pattern over the almond mixture.

In a small saucepan, heat apricot preserves over low heat until melted. Brush preserves over the pears.

Sprinkle sliced almonds over the top. Bake for 35-40 minutes, or until crust is golden brown.
