In a large saucepan, bring the vegetable broth to a boil. Slowly pour in the polenta while whisking continuously.

Reduce heat to low and simmer for 20 minutes, stirring occasionally.

In a separate pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.

Stir in the diced tomatoes, black beans, corn, jalapeno, salt, black pepper, and cumin. Cook for 5 minutes.

Once the polenta is cooked, remove from heat and stir in the cheddar cheese until melted and creamy.

Serve the creamy polenta topped with the Tex-Mex mixture.
