In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add sun-dried tomatoes and cook for another 2 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Using an immersion blender, blend the soup until smooth.

Stir in heavy cream, basil leaves, salt, and black pepper. Simmer for another 5 minutes.

Meanwhile, assemble the panini by spreading butter on one side of each bread slice.

Place a slice of cheddar cheese on the unbuttered side of 4 bread slices. Top with another bread slice, buttered side up.

Heat a skillet over medium heat and grill the panini until golden brown and the cheese is melted.
