  1. Peel and chop the carrots, onion, and garlic.
  2. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
  3. Add the chopped carrots to the pot and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the carrots are tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper.
  7. Simmer for another 5 minutes to heat through.
  8. Serve hot, garnished with fresh parsley.
