Peel and chop the carrots, onion, and garlic.

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.

Add the chopped carrots to the pot and cook for another 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the carrots are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper.

Simmer for another 5 minutes to heat through.

Serve hot, garnished with fresh parsley.
