  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream and flour until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan. If desired, sprinkle crushed cookies on top.
  5. Bake for 40 minutes or until the center is set. Remove from the oven and let cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely.
  7. Refrigerate for at least 2 hours or overnight before serving.
