  1. In a mixing bowl, cream together butter, granulated sugar, vanilla extract, and peppermint extract.
  2. In a separate bowl, whisk together all-purpose flour, cocoa powder, and salt.
  3. Gradually add the dry ingredients to the butter mixture and mix until well combined.
  4. Divide the dough into two equal portions and shape each portion into a log.
  5. Wrap the logs in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Slice the chilled dough logs into thin rounds and place them on the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Allow the cookies to cool completely on the baking sheet.
  10. In a microwave-safe bowl, melt the dark chocolate and vegetable oil together.
  11. Stir in the peppermint extract.
  12. Dip each cooled cookie into the melted chocolate mixture, coating one side.
  13. Place the dipped cookies on a parchment-lined baking sheet and refrigerate until the chocolate is set.
