Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add chopped broccoli and vegetable stock to the pot. Bring to a boil and simmer for 15 minutes or until broccoli is tender.

Use an immersion blender or transfer the soup to a blender, blend until smooth.

Return the soup to the pot, stir in Dijon mustard, heavy cream, salt, and black pepper. Simmer for another 5 minutes.
