Preheat the oven to 375°F (190°C).

Slice the zucchini into thin rounds.

In a mixing bowl, combine cottage cheese, eggs, diced onion, minced garlic, breadcrumbs, parmesan cheese, salt, and black pepper. Mix well.

Grease a baking dish with olive oil.

Layer half of the zucchini slices on the bottom of the baking dish.

Spread half of the cottage cheese mixture over the zucchini.

Repeat the layers with the remaining zucchini and cottage cheese mixture.

Sprinkle some breadcrumbs and parmesan cheese on top.

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
