Cookie butter is a spread made from speculoos cookies, which are spiced shortcrust biscuits popular in Belgium and the Netherlands.

Preheat the oven to 350°F (175°C) and grease a bundt cake pan.

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.

In a large bowl, cream together the softened unsalted butter, granulated sugar, and cookie butter until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.

Pour the batter into the prepared bundt cake pan and smooth the top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

In a small saucepan, heat the remaining cookie butter and heavy cream over low heat until melted and smooth.

Remove from heat and whisk in the powdered sugar until well combined.

Pour the cookie butter ganache over the cooled bundt cake.

Let the ganache set for 20-30 minutes before serving.
