Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the flour.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned. Remove from the oven and let cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. In a blender or food processor, puree the raspberries until smooth. Strain the puree through a fine-mesh sieve to remove the seeds. Stir in the powdered sugar and lemon juice.
  8. Serve the cheesecake with the raspberry sauce on top. Enjoy!
