Cosmic Brownies were first introduced by the Little Debbie brand in 1960 and have since become a popular treat enjoyed by people of all ages.

  1. Preheat the oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt the butter. Stir in the granulated sugar and cocoa powder until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the all-purpose flour and salt, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Remove from the oven and let cool in the pan for 30 minutes.
  8. In a microwave-safe bowl, melt the mini marshmallows and chocolate chips with vegetable oil in 30-second intervals, stirring until smooth.
  9. Pour the melted marshmallow mixture over the cooled brownies and spread evenly.
  10. Sprinkle rainbow sprinkles on top.
  11. Refrigerate for at least 1 hour, or until the marshmallow layer is set.
  12. Remove from the pan, cut into squares, and serve.
