Coconut-Cherry Thumbprints
Thumbprint cookies get their name from the thumbprint-like indentation made in the center of each cookie, which is then filled with a delicious filling.

Preheat the oven to 350°F (175°C).

In a bowl, combine the all-purpose flour and shredded coconut.

In a separate bowl, cream together the softened butter, granulated sugar, vanilla extract, and salt until light and fluffy.

Gradually add the flour mixture to the butter mixture, mixing until well combined.

Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.

Use your thumb or the back of a spoon to make an indentation in the center of each cookie.

Fill each indentation with a teaspoon of cherry preserves.

Bake for 12-15 minutes, or until the edges of the cookies are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Once cooled, dust the cookies with powdered sugar.
