  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture and mix until just combined.
  5. Stir in the rolled oats, pretzels, chocolate chips, coffee grounds, potato chips, and butterscotch chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until golden brown.
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
