Preheat the oven to 375°F (190°C).

In a bowl, mix the mixed berries, Cointreau, sugar, cornstarch, lemon juice, and vanilla extract.

Roll out the pie crust and cut out circles to fit into a muffin tin.

Press the pie crust circles into the muffin tin.

Fill each pie crust with the berry mixture.

Brush the edges of the pie crust with beaten egg.

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
