Coffee Crisps were first introduced in Canada in 1938 and are a popular chocolate bar known for their coffee-flavored wafer and milk chocolate coating.

Preheat the oven to 350°F (175°C).

In a small bowl, dissolve the instant coffee powder in 1 tablespoon of hot water.

In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, vanilla extract, and the dissolved coffee.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Stir in the chocolate chips and chopped walnuts.

Drop rounded tablespoons of dough onto a greased baking sheet.

Bake for 10-12 minutes or until golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
