Coconut-Orange Mini Tea Muffins

Preheat the oven to 375°F (190°C) and grease a mini muffin tin.

In a large bowl, whisk together the flour, baking powder, salt, shredded coconut, and granulated sugar.

In a separate bowl, whisk together the melted butter, egg, orange zest, orange juice, coconut milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes.
