  2. In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
  3. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the beaten egg whites into the coconut mixture.
  5. Using a spoon or a cookie scoop, drop rounded mounds of the mixture onto the prepared baking sheet.
  6. Bake for 20 minutes or until the macaroons are golden brown.
  7. Optional: Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Drizzle or dip the cooled macaroons in the melted chocolate.
  8. Allow the macaroons to cool completely before serving.
