  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a medium bowl, combine the crust ingredients: crushed graham crackers, shredded coconut, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared baking dish.
  3. In a separate bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until well combined.
  4. Pour the lime mixture over the crust in the baking dish.
  5. Bake for 20-25 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool at room temperature for 1 hour.
  7. Transfer to the refrigerator and chill for an additional 2 hours.
  8. Once chilled, sprinkle powdered sugar on top.
  9. Cut into bars and serve chilled.
